Let me set the scene for you guys: It is mid-September on a chilly, rainy Sunday morning and you have zero plans for the day. You’re in the mood for breakfast but also want to stay in your pajamas, have a lazy day, and watch movies. This was literally Sabir and I this past weekend, haha.
I have been dying to make pumpkin waffles and fall mimosas but honestly haven’t had any free weekends to be able to relax and do just that. To our surprise, we literally had nothing scheduled for this weekend and it felt AMAZING. We made breakfast (or should I say brunch because we didn’t start eating until 3pm – oops) and watched TopGun (SO GOOD) and binged “Dated and Related” hahah.
The recipe I used for the Pumpkin Waffles can be found here. If you aren’t a fan of pumpkin (leave now hah), then definitely give this recipe a try. These recipes are always a hit whenever we make pancakes. Even non-vegan’s love them hahah. The recipe uses Bisquick, which is prob why they are so damn good.
Instead of 2 TBS of sugar, I ended up using 4 TBS of monk fruit. They turned out amazing! My niece, nephew and cousin were over and literally devoured them!
We topped the waffles off with either syrup or a smidge of Williams Sonoma’s Pecan Pumpkin Butter. If you have yet to try this, run out now and grab one! It is amazing on any type of pumpkin bread. We like to use it on waffles, pancakes or just regular pumpkin bread.
As you guys know, I always have to make it extra so of course I used the Dash Pumpkin Waffle Maker. It does take a little time to make a big batch, so I recommend buying two of them if you are hosting a brunch for a larger crowd (you can find them at HomeGoods for $9.99 each).
Use about 2.5 TBS of batter for each waffle. I did NOT use any spray on the waffle iron (it is non-stick) and had no issues with the batter sticking!
I will admit, I am more of a savory person when it comes to breakfast. So for those who are like me, I decided to make a balsamic fig avocado toast! It was super easy and delicious. All I did was combine 1 avocado, lemon juice, red pepper flakes, salt and pepper. Add that to two slices of toasted pumpernickel bread and top with halved figs, pecans and balsamic glaze. DELISH, my mouth is watering as I type this out.
A little shortcut I like to use when I can’t find avocados that are ripe is to buy fresh, chunky guacamole! It’s perfect for those times when you are in a pinch.
And what is brunch without mimosas? I am always very festive during the fall season so to keep those vibes going, I opted for a different type of mimosa! If you haven’t checked out my fall mimosa recipe – definitely give it a try! It is to die for.

Putting together a festive fall breakfast or brunch does not have to be complicated! These recipes were super easy to throw together and everything was done within 30 minutes. If you’re looking for something you can just pop into the oven and not have to worry about mixing ingredients, Trader Joe’s has amazing pumpkin cinnamon rolls that would also be ~on trend~ for a fall breakfast (and they happen to be vegan)!
